Maize is the most widely grown cereal in the world after wheat and rice. It is an ancient crop originating from Mexico. According to archaeological findings, it can be documented that it was grown between 7,000 and 10,000 years ago. It reached Europe in the 16th and 17th centuries, when it became an important crop that helped avert famines due to its ease of cultivation. Bread and flatbreads (tortillas) are baked from it, and it is used to prepare cornmeal mush and polenta.
Maize has become a victim of genetic manipulation. In the EU, the only genetically modified maize permitted is MON 810 from the company Monsanto. A Bt-toxin (a poison that kills insects) is inserted into it. In six EU countries, the cultivation of genetically modified maize is prohibited. These countries include Hungary, Luxembourg, Germany, Austria, Greece and France.
It has a higher glycaemic index.
Maize does not contain gluten.
It is of a neutral nature and sweet taste. It tonifies the kidneys and harmonises the stomach. It is suitable for digestive disorders, diarrhoea, impotence and oedema. It has diuretic effects.
