Parsley originates from the eastern Mediterranean and has spread throughout Europe. Parsley contains provitamin A, B-group vitamins, vitamins C and E, potassium, magnesium, iron, calcium, sodium and phosphorus. The leaves also contain a higher amount of folic acid.

Parsley has a pungent taste and a warm nature. It influences the centre, nourishes the blood, strengthens the liver, dehydrates, eliminates cold phlegm and supports digestion. It is excellent for winter vegetable broths.
